Rosemary Beef Tenderloin

Have enough Valentine's sweets to get you to Easter already? Here's a recipe that's sure to impress your friends and family. After all, isn't the way to someone's heart through their stomach?

Servings 6


  • 1 beef tenderloin (4-5 pounds) cut into 6 steaks
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh chopped rosemary
  • 3 cloves finely chopped garlic
  • kosher salt and black pepper
  • 2 tbsp salted butter
  • 2 shallots, thinly sliced
  • 12 oz wild mushrooms, torn
  • 2 tsp dijon mustard
  • 1/2 cup dry white wine
  • 1 cup heavy cream or whole milk
  • 1/3 cup grated parmesan
  • 1 pinch crushed red pepper flakes


  • Preheat the oven to 400 degrees F. Rub the steaks with the rosemary and garlic and season with salt and pepper.
  • Heat the olive oil in a large skillet over high heat. Add the steaks and sear each side, about 2 minutes per side. Transfer steaks to a baking sheet and into the oven for about 10 minutes. With a meat thermometer, the temperature should be 120-125 degrees F.
  • While your steaks are cooking, melt the butter in a skillet over medium heat. Add mushrooms and shallots, season with salt and pepper. Cook without stirring for 5 minutes or until golden. Then, stir and continue cooking until the mushrooms have caramelized (about 3-5 minutes). Then, remove the mushrooms from the skillet.
  • Add wine and simmer 3-5 minutes, or until wine has reduced by about 1/3. Slowly pour in cream and mustard. Bring sauce to a boil, then reduce heat to low and simmer for 5 minutes.
  • Remove from heat and stir in the parmesan and mushrooms and season with salt, pepper, and crushed red pepper. Serve the steaks and pour the sauce on top. Enjoy!
